Hydrocarbons and alcohols will indeed leach different types of monomers and oligomers - both are low molecular weight base chemistries for reactive resin systems. However, when properly formulated and reacted - i.e., cured - these materials no longer exist but are bound up in and make the highly crosslinked matrix that is also reacted to the glass [or carbon fiber or aramid, etc.]. The original epoxy systems had issues with toxicity, reactivity and formulation, but these same systems today are routinely used if not for the actual tank then as the sealants around the seams of metalized tanks. These same vinyl ester systems are also used to make industrial chemical tanks.
A prudent builder will always flush a new vinyl ester fiberglass tank out with solvent before using it in a critical flight test. But there is little reason to not consider testing and using E85 in a composite fuel tank system.
As for the water issue, a correctly formulated E85 is no worse than standard AvGas. Go read the original CAFE reports.

Some Glasair builders coated the inside skin leading edge areas to prevent fiber glass fibers from getting in their fuel system. If they didn't use exact ratio of resin to catalyst and the resin hasn't fully cured, they may have problems with ethanol.
