erratic oil temperature indication

Hello all,
 
I recently noticed that the oil temp reading in our Extra became erratic and the indication is jumping between about 160°F and 200°F.
The high value seems to be at around the level I expect, while the low level is certainly too low. The needle in the temp gauge (Westach twin indicator for oil pressure and temp) is not moving slowly but jumping quite fast back and forth.
It seemed to be ok when I warmed up the oil on the ground before an oil-change, but in flight (with higher oil temps) the problem came back.
 
Has anyone seen something like this before and can give some recommendations to what we should look at? I´m suspecting the temp probe right now, but as the plane is more then an hour away from my home, I´d rather get as much suggestions from anyone experienced, before getting lost an endless "trial and error" hunt , chasing the issue.

Hi Markus,

The only time I've seen that before is when I've had a bad sender or loose connection.
Typically temps are the slowest moving of any sensor.
