Something like this:

I had got it in mind that it was part of a feedback mechanism to sense and control the trim position. But if it's just a visual indicator...
I don't know the system you're interfacing to but if I were designing something I'd still use a 10 turn device as it means you don't have to worry about the angular position of the pot in its mount. I'd run the output of the divider to the analog input of a $1 PIC mounted adjacent and have a simple calibration procedure to setup the two endpoint voltages. The PIC can output any analog or digital signal you want.

I'd most definitely use a dedicated servo pot

What's a "servo pot"?

This will provide a visual indication of the trim position. Something that I haven't had before. So if it stops indicating, it's absolutely not a problem. If it stops rotating, that would be annoying, but not insurmountable.

This will be connected to a VPX. Once connected there's a calibration procedure to set the start and stop positions of the trim system.

There's no way to get more than one rotation on the pulley. 1/2 - 3/4 turn is what I'm going to be looking at. So a one turn pot will provide more than enough motion.
